They wore a special outfit with this terrifying beak, to protect the doctor from the poisonous vapors of the disease. Plus, they just like to look like birds. The mask would be stuffed with herbs and spices. Not 11 secret herbs and spices. So it didn’t smell like KFC. The presence of the plague doctor meant that death was imminent.
